Preparing Sultan tea is an art. Follow these steps to get the authentic taste of Marrakech's coffee shops:

  1. Washing the tea (The secret): Add two teaspoons of Sultan tea in the kettle. Pour a cup of boiling water, let it steep for 30 seconds and throw that water away (but keep the grounds). This removes the initial bitterness and «cleans» the tea.

  2. Infusion: Fill the kettle with boiling water over the cleaned beans.

  3. The Fresh Touch: Introduce a good bunch of fresh mint (previously washed) and add sugar to taste (traditionally enough is used, but you can adjust it).

  4. El Reposo: Put the kettle on the fire for a couple of minutes until it comes to a boil or let it stand covered for 5 minutes so that the mint releases its essence.

  5. Mix and aerate: This is the key step. Pour a cup and pour it back into the kettle. Repeat this 2 or 3 times. This mixes the sugar and oxygenates the tea.

  6. El Escanciado: Pour the tea by holding the teapot. from the top. This creates the characteristic foam (the «peat») that keeps the heat and aroma in the glass.
